Todo empezó hace 4 años cuando en la Escuela de Música, llevaba a mi hija a su acostumbrada clase y por inconvenientes con el transporte las madres nos quedábamos afuera esperando a que terminara la clase. De allí surgió la idea de que los representantes en el tiempo de espera pudiéramos aprovecharlo en realizar algún curso, fue en ese momento donde nos ofrecieron el curso de vinos fue un momento muy chévere porque cada una compartimos saberes y hubo más integración en el grupo, sin más preámbulos vamos a lo nuestro a elaborar vinos.

It all started 4 years ago when at the School of Music, I took my daughter to her usual class and due to inconveniences with the transportation we mothers were left outside waiting for the class to finish. From there came the idea that the representatives in the waiting time we could take advantage of it to take a course, it was at that moment where we were offered the wine course was a very cool moment because each one of us shared knowledge and there was more integration in the group, without further ado we go to our thing to make wine.

El primer paso; buscar las herramientas a utilizar en nuestro caso debemos de buscar una botella de agua mineral de vidrio de 16 litros aproximado de capacidad, 1 tapa plástica, 1 manguera de ᴓ 1 cm, coladores de tela, tazas plásticas medidoras, cucharas de medidas, cinta adhesiva, bolsa plásticas de color negro u oscuro, guantes, envases de vidrio. Todo debe estar limpio y esterilizado.

The first step; look for the tools to use in our case we must look for a glass mineral water bottle of approximately 16 liters of capacity, 1 plastic cap, 1 hose of ᴓ 1 cm, cloth strainers, plastic measuring cups, measuring spoons, adhesive tape, black or dark colored plastic bag, gloves, glass containers. Everything must be clean and sterilized.

2do paso; hablaremos de los ingredientes en este caso utilizaremos 3 kilos de azúcar, 3 kilos de mora, 2 cucharadas de levadura instantánea, 15 litros de agua mineral o filtrada.

2nd step; we will talk about the ingredients in this case we will use 3 kilos of sugar, 3 kilos of blackberry, 2 spoonfuls of instant yeast, 15 liters of mineral or filtered water.

3Er paso; aquí seleccionamos la fruta y realizamos el despalillado, las lavamos bien y en una taza plástica la colocamos para proceder a triturarla un poco; es decir, romper un poco la fruta, para esta actividad utilizamos el pasapuré. Aparte en una taza plástica colocamos un poco de agua tibia a la cual le añadimos 2 cucharadas de azúcar y de levadura, mezclar con pequeños movimientos y guardar por 15 minutos en un área oscura para activarla. Luego al transcurrir los 15 minutos, colocar el agua restante en el botellón de vidrio, en donde está reservada la fruta mezclarla con la levadura y luego verter en el botellón, al introducir los líquidos se debe dejar 5 dedos de espacio.

3rd step; here we select the fruit and do the de-stemming, wash it well and place it in a plastic cup to proceed to crush it a little; that is to say, break the fruit a little, for this activity we use the potato masher. Separately in a plastic cup we put some warm water to which we add 2 tablespoons of sugar and yeast, mix with small movements and keep for 15 minutes in a dark area to activate it. Then after 15 minutes, place the remaining water in the glass bottle, where the fruit is reserved, mix it with the yeast and then pour it into the bottle. When introducing the liquids, leave 5 fingers of space.

4to paso; el montaje: después de verter el líquido colocarle una tapa plástica con un orificio por donde colocaremos la manguera y esta debe quedar en el área del espacio que dejamos en la botella, la manguera no debe tocar el líquido, el otro extremo de la manguera se debe colocar en un frasco de vidrio lleno de agua, se debe colocar cinta adhesiva en la tapa para tener un buen sellado; en el frasco de vidrio se debe colocar una etiqueta con la fecha del montaje. Ya aquí se coloca en un espacio oscuro donde no se mueva el frasco y colocarle la bolsa de color oscuro y esperar 7 días para que se produzca la fermentación.

4th step; the assembly: after pouring the liquid place a plastic lid with a hole through which we will place the hose and this should be in the area of the space we left in the bottle, the hose should not touch the liquid, the other end of the hose should be placed in a glass jar filled with water, tape should be placed on the lid to have a good seal; in the glass jar should be placed a label with the date of assembly. Once here it is placed in a dark space where the jar does not move and place the dark colored bag and wait 7 days for the fermentation to take place.

5to paso; ya trascurrido los 7 días se procede el colado, se debe observar los residuos de levadura en el fondo del botellón y la fruta en la parte de arriba, se inicia el colado separando la fruta del líquido usando coladores de tela.

Step 5; after the 7 days have elapsed, the straining process begins, observing the yeast residues at the bottom of the bottle and the fruit at the top, the straining process begins by separating the fruit from the liquid using cloth strainers.

6to paso; después del colado verter nuevamente en el botellón y colocar fecha del 1er colado, a los dos días volver a colar, este procedimiento se debe realizar de 3 a 5 veces hasta visualizar ausencia de levaduras en el fondo del botellón. Nota: durante el primer colado se debe probar y rectificar con azúcar si sentimos que el sabor esta algo fuerte de sabor.

6th step; after the straining pour again in the bottle and place the date of the 1st straining, after two days strain again, this procedure should be done 3 to 5 times until visualizing the absence of yeast at the bottom of the bottle. Note: during the first straining it should be tasted and rectified with sugar if we feel that the flavor is a little strong.

7mo paso; el embotellado: ya aquí vierte el líquido de la botella a guardar, a partir de aquí está listo para consumir y disfrutar de esta rica bebida. Se ve un poco largo el proceso, pero nosotros en nuestra casa todos participamos en la realización y es divertido, porque ya en celebraciones o en días festivos, están forman parte de nuestras nuevas tradiciones en familia. Espero se animen a realizarlo, no tengan miedo a experimentar. Otra cosa aquí nuestros sentidos nos ayudara a saber cómo está el vino, la observación, el aroma, el gusto, en el primer colado deben probar y si sienten algo fuerte como un sabor algo seco, se debe agregar 100grs de azúcar para rectificar solo se debe realizar ese proceso en la primera colada.

7th step; the bottling: already here pour the liquid from the bottle to save, from here it is ready to consume and enjoy this delicious drink. It looks a little long the process, but in our house we all participate in the realization and it is fun, because already in celebrations or holidays, are part of our new family traditions. I hope you are encouraged to do it, do not be afraid to experiment. Another thing here our senses will help us to know how the wine is, the observation, the aroma, the taste, in the first pouring you should taste and if you feel something strong like a somewhat dry taste, you should add 100grs of sugar to rectify only this process should be done in the first pouring.
