오늘은 나름의 야심작으로 백종원 돼지갈비찜 레시피를 응용해

더 맛있게 만드는 돼지갈비찜 레시피를 가지고 돌아왔어요!

야들야들한 돼지갈비와, 신선한 야채들, 그리고 짭쪼롬하고 달큰한 양념이 깊게 배어서

갈비찜 한 입이면 밥이 술술 넘어가는 마법의 요리죠!

기존 백종원 레시피에서 조금 더 추가해서 만든 간단한 돼지갈비찜!

I'd like to introduce steemians Korean style braised short pork ribs(galbi jjim) food, today!

It is made of sauces based with soy sauce, garlic, fresh pork ribs, vegetables.

Usually, because of it's complicated recipe, many Korean have this food on special day like birthday, holiday to celebrate the day.

But these day, this simple and great recipe is known to a lot of people, it is more easier to cook this food !

It takes a little long time to complete, but if you eat it after long patient, maybe you will be fall in love with Korea!

@ 재료 : 돼지갈비 1키로, 무 1/4 토막, 양송이 버섯 5알, 당근 조금, 양파1/4쪽, 대파 3뿌리(큰 건 반 뿌리정도), 말린 대추, 인삼 약간
고기 삶을 때: 월계수 잎, 된장, 통마늘, 인스턴트 블랙커피, 미림
양념: 다진마늘, 후추, 양파 분말, 간장, 설탕, 매실청, 굴소스, 배즙(대신 갈아만든 배로 대체)

@ ingredients : short pork ribs 2 lb, Korean radish 1 lb, white mushroom 5 pieces, a little carrot, 1/4 onions, a little leek, dried jujubes and ginseng

To boil with.. : bay leaves, soybean paste, whole garlic, ground instant coffee, cooking wine

To make sauce..: crushed garlic, black pepper, onion powder, soy sauce, sugar, fruit syrup, oyster sauce, pear juice

고기는 전 날 찬물에 6시간 이상 담가 핏물을 패고 월계수잎 2장, 미림 약간, 통마늘, 후추, 된장 한 스푼, 인스턴트 커피 1티 스푼 등을 넣어 1차로 삶아서 건져냈다가 사용해주세요. (중간에 떠오르는 불순물은 걸러주고,
콜라를 사용하면 핏물 빼는 시간을 단축 할 수있답니다)

In order to remove the blood in meat, soak in cold water over 6 hours, then boil them with bay leaves, cooking wine, whole garlic, soybean paste, instant coffer powder for 15 mi.

(While boiling, you should remove the impurities from the water.)

계랑컵ㅡ종이컵 기준/ 숟갈ㅡ아빠 숟갈 기준
measuring cup - 180ml

간장 반 컵, 미림 반 컵, 설탕 반 컵, 배즙( 1/3컵), 다진마늘 3 스푼, 후추& 양파 분말 약간, 굴 소스 2 숟갈을 넣어 양념소스를 만들어 두어요.

Mix a half cup of soy sauce, a half cup of cooking wine, one/third cup pear juice, 3 spoons of crushed garlic, a little black pepper powder and onion powder, 2 spoons of oyster sauce.

잘 삶아진 고기에 대추, 인삼을 약간 넣고
만들어둔 분량의 양념장을 넣어 강불에 10분간 끓입니다.

Put a little dried jujube and ginseng into the pot,

boil with the sauce for 10 mi in high temperature.

( If you don't have dried jujube and ginseng, you can skip, they are used to make more Korean style scent!)

고기가 어느 정도 양념색을 입으면 단단한 채소 먼저 넣어서 중불에 15분 끓여줘요.

The color of the meat is changed to brown color, put firm vegetables into the pot, boil for 15 mi in middle temperature.

버섯, 양파, 파, 고추를 넣어서 10분간 더 익힙니다. 이제 거의 다 왔어요!

Put white mushroom, onion, leek, red pepper into the pot, boil more for 10 mi in middle temperature.

매운 돼지갈비찜을 원한다면
이 단계에서 다량의 청양고추와 고추가루를 투하! 하세요!

설탕. 매실청. 배즙이 모두 단 재료들이라
덜 달게 먹으려면 설탕 대신 사과 등 과일을 갈아서 쓰면 좀 더 건강하게 먹을 수 있어요+_+

시판 돼지갈비는 색을 더 진하게 보이려고 카라멜 소스를 쓴다는데,
집밥에서 그렇게 까진 할 필요 없어서 생략,
그래서 색은 약간 옅은 편이에요^^

You love spicy food? Then, mix some Korean chili pepper and chili powder into the pot!

And if you want to make this food less sweeter, you can use fruit syrup like apple, pear, kiwi, plum instead of sugar!

만드는 과정이 짧지는 않지만
겁먹을 필요는 없는

If you have eaten Korean style braised pork ribs(galbi jjim), maybe it has more deep brown color.

To improve it's visual tastes, many restaurants use caramel syrup for this food. But homemade food doesn't use it, so the color is more brighter^^ It means this food is more healthier than restaurant's !
